Lamb Kofta

500g Lamb mince
1 brown onion, diced
3 cloves of garlic, minced
1/2c fresh bread crumbs
1 tbsp fresh mint, finely shredded
1 tsp chilli flakes
1 tsp cumin powder
Salt & pepper
Olive oil

Turkish Flat Bread

1 pack dry yeast
1 tbsp white sugar
1 tbsp salt
1 ½ cups warm water
½ cup Greek yogurt
4 cups flour

Rice Pilaf with Orzo

1 cup long grain white rice
2 1/2 cups vegetable stock
75gm Orzo
1 brown onion, diced
2 tbsp butter
2 cloves garlic, minced
1 tbsp fresh lemon juice


Lamb Kofta

1. Finely dice onion and garlic and shred mint.

2. Mix all ingredients and form into sausage shapes then feed onto skewers.

3. Fire up the Ozpig with with char grill plate.

4. Grill your koftas turning often to achieve beautiful char marks on all sides.

Flat Bread

1. Dissolve the yeast, sugar and salt in the water. Add the water and yogurt to the flour and knead into a dough.

2. Cover the dough with a damp cloth and keep in a warm spot. Let prove for 3 hours, the dough will almost triple in size.

3. Turn out the dough and divide into 16 equal parts then ball up. Cover again with the damp cloth and let rest for 15 minutes.

4. Pin out the dough balls into thin circles.

5. Prep the Ozpig for medium to high heat and preheat your pan.

6. Cook the flat bread on the first side for around 3 minutes until air bubbles start to form on the surface and the bottom has browned.

7. Turn the bread and you'll see a large air pocket start to form, continue cooking for a couple more minutes until browned on both side.

8. Stack on a plate as you go and wrap with foil or a cloth to keep warm.

Rice Pilaf

1. Prep the Ozpig and your pan/pot for medium heat.

2. Rinse your rice to remove excess starch.

3. Finely dice onion and garlic.

4. Heat the stock (in a separate pan) to a simmer then keep to the side.

5. Melt butter and oil then add the orzo. Coat the orzo in the butter and toast for 3-4 minutes, this process will add a slightly nutty flavour to the dish.

6. Add the onion and garlic and soften. Add the rice and cook for a few minutes until rice is opaque.

7. Add hot stock and season with salt and pepper. Bring to the boil, reduce the heat to a simmer. Cover with a lid and let cook for around 20 minutes.

8. Add lemon juice and fork the rice. Cover again and hold the temperature on the Ozpig's warming plate.
